Show Izakaya was born from a simple conviction: that the people of Davis deserved a Japanese dining experience that went beyond the familiar — one that honored the original spirit of the izakaya, that distinctly Japanese institution where food and drink are served in a spirit of warmth, craft, and ease.
The word izakaya (居酒屋) translates literally as "stay-drink-place" — a room where you linger, where the night deepens unhurried over small plates and carefully poured sake. We have tried to create exactly that: a place where time moves differently, where the food is prepared with quiet attention, and where every guest is welcomed as they cross the threshold.
Our name, Show (秀), speaks to our aspiration: excellence in the craft, an elevated standard, and the determination to stand above. The same character appears in our logo alongside the kanji that shaped our kitchen's philosophy.
Three principles that guide every decision we make — from sourcing fish to greeting guests
We follow the season. Fish arrives from Japan when it is at its finest; our small plates shift with what is growing and available. We don't force produce out of its time.
Every knife stroke, every seasoning adjustment, every bowl of ramen broth ladles out the same care. Craft is not a statement — it is simply how we work.
In Japanese aesthetics, ma is the meaningful pause — the silence between notes. We believe a good meal has rhythm: the right dish at the right moment, served with an unhurried grace.
The aesthetic philosophy of wabi-sabi — finding beauty in imperfection, impermanence, and incompleteness — guides the design of our space and the spirit of our kitchen. A broth that is never quite the same twice.
We are in downtown Davis, California, but we carry within us something of the narrow lantern-lit streets of Shinjuku and the quiet counter bars of Osaka's Dotonbori. Come as you are. Stay as long as you like.
